Mulled Wine Recipe

Serves 8-10 portions


Ingredients

• 2 Oranges

• 1 lemon

• 1 lime

• 200g caster sugar

• 6 whole cloves

• 1 cinnamon stick

• 3 fresh bay leaves

• 1 whole nutmeg

• 1 vanilla pod

• 2 star anise

• 2 bottles of full bodied red wine, such as Malbec or Shiraz





Method

  1. Peel all the citrus fruits

  2. Put the sugar, citrus peelings & orange juice in a pan on a medium heat

  3. Add a few gratings of nutmeg, and the rest of the spices to the pan. Add enough red wine to cover the sugar and spices

  4. Simmer to dissolve the sugar then boil for 4-5 minutes until you have a sugar

  5. consistency

  6. Add the rest of your wine, simmer for a further 4-5 minutes and serve warm
