Serves 12 - 14 Portions
Ingredients
• 1kg Pork sausage meat
• 2 onions, finely diced
• 200g Chestnuts, chopped
• 200g Breadcrumbs, made on site!
• 1 Bunch Sage, chopped
• 1 Lemon, zest
• ½ Fresh Nutmeg, grated
• Sea Salt, pinch
• White Pepper, pinch
Method
• Mix all ingredients together
• Roll in cling film in to a cylinder shape and steam for 25 – 30 mins.
(alternatively press mix in to a baking tray and bake)
• Once cooked, chill stuffing and cut to portion size and re-heat when needed.
